“Cheese—milk’s leap toward immortality.” — Clifton Fadiman

Fun fact:

Roquefort blue cheese was supposedly discovered by accident! According to legend, a young shepherd left his lunch—a piece of bread and sheep’s milk cheese—inside a cave in Roquefort, France when he got distracted by a beautiful girl. When he returned weeks later, the cheese had developed the signature blue-green veins thanks to the naturally occurring Penicillium roqueforti mold in the cave. Instead of throwing it away, he tasted it—and thus, Roquefort was born!

Roquefort is not gluten free.
